Ingredients

Bowl:

noodles (eg. rice noodles, pad Thai noodles, linguini etc.)

fresh vegetable mix, chopped (cabbage, carrots, red pepper, radishes, scallions)

chicken/tofu, seasoned and cooked

edamame

cilantro, chopped

peanuts

sesame seeds

peanut sauce

Instructions

  1. Arrange noodles, vegetables and chicken or tofu in your favorite bowl.

  2. Top with edamame, cilantro, peanuts, peanut sauce and sesame seeds.

  3. Serve and enjoy! : )

Peanut Sauce

6 thin slices of ginger - cut across the grain about the size of a quarter (no need to peel)

2 cloves of garlic

½ cup fresh orange juice

⅓ cup lime juice (about 2 limes)

¼ cup soy sauce

⅓ maple syrup

⅓ cup toasted sesame oil (6 tbsp)

½ cup unsweetened peanut butter

1 tsp salt

1 tsp cayenne pepper or a squirt of sriracha sauce

Place all ingredients in a high speed blender and blend until smooth. (adjust sweetness, cayenne, and salt to liking)
