peanut butter granola

Ingredients

3 heaping cups rolled oats 

2 tbsp brown sugar

¼ cup coconut oil, melted

¼ cup creamy peanut butter

¼ cup maple syrup or honey

⅓ cup chocolate chips, regular or mini

1 cup pretzels, broken (optional)

Instructions

1. Preheat oven to 340 F

2. In a large mixing bowl, combine oats, sugar and pretzels. (I recommend pulsing 1 cup of the oats in a blender to help the granola form clusters while baking)

3. Warm peanut butter, coconut oil, and maple syrup in a small skillet or saucepan until thoroughly combined and pourable.

4. Pour over oats and stir to combine, then gently stir in half of the chocolate chips. (not too much as you don’t want them to melt quite yet)

5. Spread evenly on a large baking sheet and bake for 18-20 minutes, or until evenly golden brown.

6. Remove from oven, top with remaining chocolate chips and let cool completely on the pan.

7. Transfer to mixing bowl or storage container.

8. Eat with your favorite milk and maybe even top with sliced bananas take it to the next level.

9. Will keep fresh for up to two weeks. Freeze after that.
