spice cookies

Ingredients

2 ½ cups rolled oats

1 tsp cinnamon

½ tsp cloves

½ tsp nutmeg

½ tsp allspice

1 tbsp flaxseed, ground

1 tbsp vanilla

8 oz dates

1 cup milk, warmed

1 tsp baking soda

Instructions

1. Preheat oven to 425F.

2. Pulse oats in a blender or food processor a few times to break them up a bit.

3. Soak dates and baking soda in warmed mlk.

4. While dates are soaking, mix oats, spices and flaxseed in medium size mixing bowl.

5. Bender date mixture in high speed blender till smooth, then add vanilla and blend a little more.

6. Add date mixture to the oat mixture and stir to combine.

7. Scoop ¼ cup scoops onto cookie sheet.

8. Bake for 8-10 minutes.

9. Let cool, and enjoy with a cup of of milk! :)
