chickpea blondies

Ingredients

1 15 oz can chickpeas, rinsed and drained

½ cup peanut butter (or almond butter)

¼ cup maple syrup (or 100g of dates)

2 tsp vanilla extract

1/3 cup oats

2 tsp baking powder

pinch of salt

1/3 cup chocolate chips + extra to top

Instructions

1. In a high speed blender, turn your oats into oat flour.

2. Add remaining ingredients and blend until smooth.

3. Stir in chocolate chips.

4. Transfer dough to a bread pan, lined with parchment paper.

5. Sprinkle some chocolate chips on top.

6. Bake at 400F for 20-25 minutes, or until toothpick comes out clean.

7. Let cool, and enjoy!
