salmon bowl

Ingredients

2 cups spring mix

4 oz salmon, cooked

1/2 cup mango or apple, cubed

1/2 cup edamame

1/4 cup red onion, pickled

1/2 cup sweet potato, roasted

1/4 medium avocado

special sauce

sesame seeds

Instructions

1. Assemble bowl starting with lettuce then add remaining ingredients, alternating between orange and green colors.

2. Drizzle with special sauce.

3. Top with a generous sprinkle of sesame seeds.

Special Sauce

1 cup mayonnaise

4 tbsp ketchup

2 tbsp BBQ sauce

2 tbsp vinegar

2 tsp paprika

salt and pepper to taste

Mix ingredients in a small bowl, then transfer to a squeeze bottle for easy dressing.
