pumpkin muffins
Ingredients
Wet Ingredients:
1 can pumpkin puree (15 oz)
1/2 cup maple syrup
1/2 cup brown sugar, packed
1/2 cup coconut oil, melted
2 large eggs
1 tsp vanilla extract
Dry Ingredients:
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
1/4 tsp cloves
3/4 cup semi-sweet chocolate chips
Instructions
1.Preheat oven to 350F.
2. Line a 12 cup muffin tin with paper liners.
3. In a large bowl, whisk together pumpkin, maple syrup, brown sugar, melted oil, eggs, and vanilla until smooth.
4. In another bowl, whisk flour, baking soda, baking powder, salt and spices.
5. Add dry ingredients to wet and stir gently until just combined.
6. Fold in chocolate chips.
7. Scoop batter evenly into muffin cups.
8. Bake for 22 minutes.
9. Cool in the pan for 5 minutes, then transfer to a rack.

*tips - for extra maple flavor, brush warm muffins with a little maple syrup right after baking. You can also replace 1/4 cup of the flour with oat flour for a heartier texture.
