Ingredients

2 tbsp ground flaxseeds

¼ cup water

3 ripe bananas

½ cup granulated sugar

¼ cup avocado oil

¼ cup unsweetened applesauce

1 tsp vanilla extract

1 tsp ground cinnamon

1 tsp baking soda

½ tsp baking powder

½ tsp salt

1¾ cups all-purpose flour

90 grams chocolate chips

Instructions

1. Preheat the oven to 350°F.

2. Mix the flaxseeds and water in a large bowl. Set aside for 2 minutes to gel slightly.

3. Add the bananas to the bowl and mash well.

4. Stir in the oil, sugar, applesauce, vanilla, cinnamon, baking soda, baking powder, and salt until well combined.

5. Add the flour next, and gently mix until partly combined.

6. Lastly, add almost all of the chocolate, reserving some to sprinkle on top, and fold in until just combined.

7. Pour the batter into a bread pan and sprinkle with the reserved chocolate.

8. Bake on the middle rack of the oven until the top is golden and a toothpick inserted into the center comes out clean, about 55 minutes.

8. Allow to cool in the pan for a few minutes, then transfer to a cooling rack to cool further.

9. Slice, serve, and enjoy!
