Ingredients
3 large egg whites, room temperature
¾ cup granulated sugar
¼ tsp cream of tartar
½ tsp vanilla extract
green food coloring gel
pinch of salt
Instructions
1. Preheat oven to 200F
2. Line a baking sheet with a silicone mat or parchment paper.
3. In a clean, dry bowl, beat egg whites & cream of tartar on medium speed until foamy.
4. Increase to high and beat until soft peaks form. (they hold shape but still droop)
5. Keep beating on high while adding sugar 1 tbsp at a time, and continue beating until there are thick glossy peaks that don’t collapse.
6. Mix in vanilla and a few drops of green food coloring, gently beating until evenly colored.
7. Using a piping bag and tip, pipe into 1 inch swirls on baking sheet. (makes about 30)
8. Bake for 1.5 hours. (done when dry to the touch and easily lift off baking sheet)
9. Turn oven OFF and let cookies cool inside with the door slightly open for about 30 minutes. (this prevents cracking and keeps them crisp)
*Tips
-Any grease or yolk in the bowl = no peaks
-try making swirl designs with white + green for a “lucky” effect
